Soup #43 / Brussel Sprout & Tomato Basil Puree

After a long day at work, what is better than pulling into the driveway and smelling something amazing that's being cooked up for dinner?  Knowing that it's coming from your kitchen, that's what! E surprised me on Saturday with a deliciously healthy dinner - and a soup! This one is simple and basic, and totally vegan and completely yummy. It has a surprising texture to it, almost like there is farina or cous-cous, or some kind of grain, but in the end it's just the essence of the Brussel sprout. Regardless, it's super tasty and easy to make. 

What you will need:

Approximately 1 cup of brussel sprouts, chopped. 
2 tomatoes, diced
3 large fresh basil leaves
1 tbsp oil
1/4 tsp garlic powder
salt and pepper to taste
1/2 cup of water
immersion blender/food processor

How to make it:
in a medium pan, on medium heat, add in your chopped brussel sprouts and about a 1/4 cup water. Allow the leaves to steam until the leaves are bright green. Remove the leaves and dump the water out. In the same pan, warm your oil and add in your two chopped tomatoes, cook until they become mushy, and then add in the brussel sprouts and garlic power, the salt and pepper to taste (or just a dash here, a dash there. You can totally skip it if you'd like). Continue to cook for another minute.

Remove from heat and allow to cool slightly. Use an immersion blender or food processor to puree soup.  Add in the 1/2 cup water as needed to thin the puree out to desired consistency. Re-heat if necessary and enjoy. E served it up with steak and potatoes (he's that kinda guy) and it paired nicely!

The verdict: 
Success! It was simple and delicious which is a double win in my book. It was full of flavor and I love the tricky texture the brussel sprouts added. 

What we'd do differently:
It was still a little thick, I would try to thin it out, maybe by adding one more tomato. I think it might taste good with some onions as well, but that might ruin the simplicity of it.
